Roasted Carrots with Maple Syrup and Coconut Oil

These might be the best carrots I’ve ever tasted.

The best way to eat a lot of vegetables is to make them non-boring. Sure, boiled carrots are easy, and raw carrots make great dippers for hummus, but these carrots make those carrots look sleepy.

Combine 1 T of maple syrup with 1 T of coconut oil. (This was actually too much for the amount of carrots I had, adjust depending on how many carrots you are using!)

Microwave, or heat to melt the oil. Stir to combine.

Chop carrots into fourths (or smaller if you have mega carrots!)

Brush carrots with oil/syrup mixture. Roast in oven at 350* for 20 minutes, flipping halfway through.

Once finished, they will be crispy, sweet and delicious.

Enjoy with potatoes and roasted chicken :)

This one kind of threw me – my first bite contained a gigantic almond. I like almonds, but I prefer them slivered. ;-)

The next bites contained the Gogi Berries and I returned to being impressed.

At the Farmer’s Market, we ran into my grandparents! I love how even though Calgary is a big city, it can feel like such a small town :)

The four of us (me, Grant, Grandma, Grandpa) ended up going out for breakfast, and I had my absolute favorite breakfast.

Pancakes with Apple Cinnamon topping. Yum! Not at all clean, but absolutely delicious and such a treat.

This afternoon I had some classic studying food, cereal.

The cereal was some new non-name stuff I got at Superstore today. I was pretty impressed! The ingredient list is kind of long, but atleast I recognize every one (and no HFCS or hydrogenated oil!) I’m not someone who overly worries about HFCS, since I try to avoid processed foods in the first place, but for something like cereal (which I will eat lots of ;-) ) I think it’s important to keep the bad stuff out!

Grant’s having  a few friends over tonight, and we’re getting pizza, so I had a green smoothie while we’re waiting for them to get here (vegetables – check! not starving when pizza arrives – check!)

The smoothie was shy, so it hid behind the basil . lol

Tomorrow I’ll share my awesome dip recipe with you! I make it for every party we have :)

I live in Boston which is a city, but compared to other cities feels like a small town sometimes! We always bump into people we know. Those pancakes look SO good. . . calling my name for Sunday morning :)

Whoa those carrots would amazing, but still simple enough for an everyday dish. Awesome!!!

It’s great that you treated yourself to those pancakes. There’s always room for delicious treats, especially with the family!

I live in a very small town outside of a big city (Seattle). I’d rather live in a largish town/small city, but I still have time :)

pretty sure roasted carrots are my favorite! have you ever tried just EVOO salt and pepper and Dill? Trust me you will love it!

Pizza sounds delish…I haven’t had pizza in a long long time.
The carrot recipe sounds really interesting. I’ve always liked steamed carrots with a little brown sugar to add a touch of sweetness, so I bet that would be delish!

Albuquerque is the same way, and I love it most of the time! Other times, especially when you aren’t looking your best grocery shopping or something, you don’t want to run into people you might know! haha
