Roasted pumpkin seeds are one of the best things about fall. A close second?
Roasted squash seeds
and they’re so easy!

Rinse 1 C seeds with cold water, removing all of the squash pulp. Do this a few days before you roast the squash, and store in the fridge. That way, when you’ll go to roast the seeds, you call the process easy

Coat with 1 T olive oil, and salt to taste.

Spread out on a baking sheet.

Roast at 275* for 20 minutes or so, until they are all brown and toasty.
Enjoy!
Seeds are excellent sources of fiber, selenium and vitamin E. They also contain protein, zinc, and iron. While they are pretty calorie and fat dense, a 1/8-1/4 C portion makes an excellent snack!

I think I don’t feel very comfortable eating some foods because they’re calorie dense. It’s the same with peanut butter or any nut butter actually. I know they are good for me, but for now, I just don’t feel too comfortable around them.

I have NEVER thought of using squash seeds instead of pumpkin (not that pumpkin is not squash or anything…) but I’m going to have to try this now!

Mmm…I do love roasted seeds. I have only does this once, I think. I used lots of garlic salt and they were really yummy. Maybe I’ll try it again now that I have a little inspiration with your photos

I never roast any of my seeds! I need to start doing that. First we’ll need to get some pumpkins and squashes though:)
