Happy Thanksgiving!

 

What an awesome weekend – two thanksgiving dinners, and lots of time with family! :)

 

Unfortunately, I forgot my camera at home, which means I have no pictures of the awesome meals I had. (it’s a shame, because my cousins brought some awesome food! I pretty much parked myself beside the salsa! and the apple turnover dessert – yum!). I did, however, bring home lots of leftovers.

 

What to do with holiday leftovers? Soup!

I made a turkey broth by boiling some turkey bones + turkey with carrots + onion + celery + lots of salt and pepper. Cover with water, bring to boil and simmer for a few hours. To make a vegetarian soup, just leave the turkey out!

Strain the broth. Puree cooked carrots + squash (or whichever leftover veggies you have!). Combine together with chopped turkey, and bring back to a simmer. Add lots of spice! (I added chili)

Thankfully Healthy Thanksgiving Soup! Couldn’t be easier :) It was perfect for the post I-ate-too-much-for-Thanksgiving-but-it-was-so-good meal.

Mmmmm, Thanksgiving food is my favorite kind of food! :D

I love stuffing. I could probably just eat a whole plate of stuffing on T-day and be satisfied!

My homemade hazelnut, sage & mushroom stuffing that I just adore and could eat 10lbs of haha!! Also my nanny’s sweet potato/pineapple/marshmallow casserole that has been passed down through the generations… so easy, so good!

I seriously love every thanksgiving food except turkey! I don’t think I’ve eaten turkey for the past few years, I just fill my plate with all of the sides!
Stuffing is probably my fave though!

This sounds delicious! I have made soup of leftover roasted veggies but never used leftover poultry bones as well, makes anything heartier!

happy belated Canadian Thanksgiving! my fave T-day dish is definitely STUFFING. mmmmm, soooo good! i like the looks of this soup too – i will have to keep it in mind when us Americans celebrate next month :)

That soup looks fantastic…do you think it would have a similar flavor made with vegetable broth instead of turkey brother?

I do! Most of the flavour came from the squash :)

If you’re making your own vegetable broth, make sure to use lots of veggies to create a tasty broth!
