Healthy French Onion Soup

French Onion soup is one of my favourite soups. Melty cheese on top of bread, with caramelized onions? yum!

 

When I first complained about the dryness of Ezekiel Bread, Morgan suggested using the bread as croutons.

 

The next thing I new, I was concocting a Healthy French Onion Soup!

Heat (on med-low) about 1-2 tbsp of coconut oil in a large pot. Add 2 large sweet onions, sliced thin.

Saute the onions, stirring occasionally, until they turn golden-brown. (This will take a long time… about 1 hour. However, since you only need to stir occasionally, it’s not too bad ;-) )

Beginning to turn golden brown! At some point while the onions are caramelizing, add a few tsp of minced garlic, pinch salt and pepper, and about 1 tsp of dried thyme.

Look! Caramelized onions! Add 2 tbsp of white wine, and stir the onions while scraping the bits off the bottom of the pan (deglazing). Repeat to use up the wine.

Add 4 C of beef broth. Bring to a boil, and simmer for 5-10 minutes.

Divide soup into oven-safe bowls. Top each bowl with 1 slice Ezekiel bread, cut into cubes.

Top bread with a few tbsp shredded low-fat swiss cheese.

Broil until cheese is melted (about 3 minutes).

Kristin, it might! I’d still caramelize the onions first though, and that’s the biggest time commitment. But the simmering for hours would probably make the soup even more delicious!
