Breakfast for Dinner

30 Days of Blogging Dinner. A different dinner each day. Day 24: Blueberry topped waffles.

I love breakfast. And clearly, I also love breakfast for dinner.

I’ve only recently realized how easy a berry topping is to make. Combine frozen berries (1 C) and a little sugar/agave nectar/syrup (1 tsp) in a saucepan. Heat on med-low, and let simmer for a few minutes.

Enjoy on top of homemade waffles, with greek yogurt. :) In addition to being much lower in calories than pouring on syrup, it’s a lot more filling, but just as delicious.

The waffles might also be the best I’ve made yet. Based on this recipe, I subbed whole-wheat flour for white, and reduced the oil.

Whole-Wheat Waffles

Ingredients

  • 2 cups whole-wheat flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 tablespoons canola oil
  • 2 eggs, separated

Directions

  1. Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder and salt. Stir in milk, oil and egg yolks until mixture is smooth. Let sit for about 5 minutes.
  2. In a separate bowl, beat egg whites until soft peaks form. Gently fold egg whites into batter.
  3. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden; serve hot, topped with berries.

I loooove breakfast for dinner. When I have it, I usually do eggs. But this looks delish!

Pancakes are one of my favourite breakfast for dinner meals. I don’t have a waffle iron. Otherwise, I’d be making these tonight!

Love breakfast for dinner – there something so comforting about it! In college during finals they used to do a midnight breakfast for everyone who was studying late…totally the best brain food!
