Happy Mix

Acorn squash makes me happy. Acorn squash with onions, apples, spinach and free-range chicken sausage makes me really happy.

Slice an acorn squash in half. Remove the seeds (you can save these and roast them!) Drizzle with olive oil, and place in a baking pan. Add 1/4 inch water to pan. Roast squash at 400* for 35-40 minutes, until squash is tender.

Meanwhile, brown 1 pound of lean chicken sausage (or ground chicken). Add 1 tsp peppercorns, 1/2 tsp sage and 1 chopped medium onion.  Once meat is browned and onions are soft, add 1 chopped apple. Let cook until apple softens.

Once just about ready, add 2-3 cups spinach. Stir until spinach wilts slightly. Combine squash with chicken/apple/spinach mixture, and serve over brown rice.

I can’t even tell you how much I loved this dish. I’m thinking it might reappear during Christmas dinner – maybe a meatless version to serve as a side dish?

The only problem is, I don’t know what to call it. It’s not a casserole.  It’s not a stew. It’s not a stir fry. So for now, we’ll call it a mix :)

Peppercorn and Sage Apple and Squash Chicken Sausage Mix

Ingredients

  • 1 Acorn Squash
  • Olive Oil
  • 1 lb ground chicken or chicken sausage (preferable organic or free-range)
  • 1 tsp peppercorns
  • 1/2 tsp sage
  • 1 chopped medium onion
  • 1 chopped apple
  • 2-3 cups spinach
  • Brown rice, cooked

Directions

  6. Once just about ready, add spinach. Stir until spinach wilts slightly.
  7. Combine squash with chicken/apple/spinach mixture, and serve over brown rice.

This looks really good…although I’ll admit, apple in savory things freaks me out a little…never tried it. I wonder if I could get my boyfriend to eat this. I’d have to just make it and not tell him what’s in it :-)

Mmm this combination sounds amazing! I bet kidney beans would be a good sub for the chicken, too!
