
I think my favourite kitchen appliance might be my crock pot. Add ingredients in the morning – and supper is ready when you get home!
This is one of my favourite soups to make. It’s so very easy, so very good for you, and the bright orange colour, when combined with some melted cheese on top, makes the meal seem much more indulgent than it really is.

I’ve previously posted a Roasted Vegetable version of this soup as a guest post on Carrot’s N Cake, but decided to bulk up the soup with some white beans for some protein. It turned out wonderful!
White Bean, Carrot + Cauliflower Cheddar Soup
Serves 6
Ingredients
- One head cauliflower, chopped
- 4 C carrots, chopped
- 1 can navy beans, drained and rinses
- 1/2 T minced garlic
- 1 T Trader Joes 21 Seasoning Salute or Mrs. Dash Seasoning Blend or similar
- 900 mL organic chicken (or vegetable) broth
- 1/2 C finely shredded reduced-fat cheddar cheese
Directions
- Combine vegetables, beans, garlic and spices with broth in slow cooker.
- Cook on low 6-8 hours, or on high for 4 hours.
- Using an immersion blender, puree the vegetable/broth mixture. Alternatively, working in batches, puree the mixture in a blender.
- Distribute into bowls and top each bowl with 2 T shredded cheddar.

The nutrition stats are pretty awesome too! Each serving is approximately 1 cup.

this sounds SO yummy!! i am HORRIBLE with the crockpot – i mess EVERYTHING up (yes i know, how can you mess up something in the crockpot) but i need to try this recipe out
