Peanut Butter and Jam has to be one of my favourite flavour combinations. I’ve been wanting to make another batch of granola bars, and PB&J seemed an excellent version to tackle. I’m happy to say I have succeeded, this is my favourite bar yet!
(Previous Eat Clean Live Green granola bars: Original Peanut Butter and Chocolate Peanut Butter)
These bars are easy to make, keep well in the fridge or cupboard, and no baking is required! They are also full of clean, healthy and good for you ingredients
Gather the ingredients! natural peanut butter, brown rice syrup (I got mine at Superstore, I’ve also seen it at Planet Organic. Most health food stores should carry it.), rolled oats, puffed millet (again, found mine at Superstore, but most health food stores should carry it. Puffed or crisp rice would work as well), ground flax meal, hemp seeds (I prefer the whole seed for the crunch. I found mine at my local Farmer’s Market. Most health food stores will carry the hemp hearts. Sunflower seeds could be substituted!), dried cranberries, sea salt and vanilla.
Combine the dry ingredients in a large bowl. Set aside. Heat the brown rice syrup, peanut butter and vanilla on the stove (med-low) until it starts to simmer.
Pour peanut butter mixture over remaining ingredients. Mix well.
Pour into a baking dish lined with wax or parchment paper. Press flat with the back of a spatula.

Chill, and cut into bars. I cut 12 bars, which I estimate to be approximately 185 calories each.

Awesome quote I heard today: It’s not what you eat between Christmas and New Year’s, but between New Year’s and Christmas that matters!
