I’ve come to the conclusion that a taco salad without avocado is pretty weak. With avocado, however, a taco salad goes from a fairly unsatisfying mix of crunchy vegetables, to something really special. I don’t know if it’s the fat content or the taste upping the satisfactability, but avocados are amazing.
Tip: to keep the leftover avocado from going brown, leave keep the pit attached!
I think it’s a tie between avocados and sweet potatoes as to which is my favourite vegetable.

Terrific Taco Salad
- 4 C romaine lettuce, torn into small pieces
- 1/2 tomato, chopped
- 1/4 red bell pepper, chopped
- 1/2 C corn
- 2 tbsp reduced fat cheddar cheese
- 1/3 C black beans +/or ground beef, cooked
- 1/4 avocado, cut into small pieces
- 2 tbsp salsa
Combine all ingredients in a large bowl.
The salsa makes a great salad dressing!
I’m off to watch the Closing Ceremonies of the Olympics
I’m really going to miss watching the Olympics, but there was a great hockey game today to finish the games! I also think I’m going to learn how to curl, I think it looks really fun.
Oh wait, what does that box say?… I was a lucky girl to get some money for my birthday, and combined with some pennies I’d been saving, it was enough to buy myself something shiny and something new!

I just made my lunches for the week and my avocados did NOT ripen yet..I was so mad that they won’t be in my salad for tomorrow. I stuck them in a dark place, so MAYBE they will be ready! My fav vegetable is probably carrots…I just tried brussel sprouts and loved them though so it might be my new fav!

SOOO jealous of that Vita-Mix!!! I don’t think I can choose a favorite vegetable, but carrots, sweet potatoes, Brussels sprouts, and all kinds of squash would all definitely be in the running!

I love the variety of things you can do with an avocado but I’m becoming a bigger fan of butternut squash after some muffins that I made.

That taco salad looks delicious! I might give it a try one of these days. You’ll have to let us know how you like the Vita-Mix. I’ve heard mostly good reviews about it but I’ve heard a few people say they didn’t like it but mainly because it’s sooooo loud.
My favorite vegetable would have to be cauliflower. I could eat a head of that stuff in one sitting. I love love love it!

I love how avocados make everything so creamy.

My favorite vegetable would have to be broccoli and spinach,
the olympics made me want to learn how to ski! I have never done any skiing or snowboarding before and I think that would be really cool to learn!

I always forget to buy avocado! seriously all the fat in my diet comes from almond butter, but next time i go to the store im getting some so i can make this!!!
