I found this recipe on a message board – Almost Enchiladas, and I couldn’t stop thinking about the recipe since. It sounds intriguing, doesn’t it? To make it sound even better, it’s made with all real foods, and took less than 5 minutes to prepare.
Five minutes!!
That’s a perfect weeknight dinner
The base of the Almost Enchiladas is Polenta, which a mixture of cornmeal, salt and water. You can buy it prepared, or make it yourself (if you do make it on your own, let it cool in the fridge to become solid!).
The recipe also calls for Enchilada Sauce. I couldn’t find this in three different grocery stores (apparently, Canadians aren’t too fond of Enchiladas!
so instead I settled for Taco sauce.
We’re not going for authenticity here folks, we’re going for taste!
And believe me, this recipe is a taste success. It’s also super filling, and packed with nutritious food. Did I mention it only took 5 minutes to prepare?!

That sounds really good! I’ll have to try it. Knowing my DH, I may add chicken or ground turkey.

This look like a great recipe Alison!
Like Abby, I’ve been meaning to try polenta for a while now…do you think it’s best to go with a pre-made version as a first-timer? What section of the grocery store does it hide in usually?
Looking forward to reading more, xo

Jean, I’d try the premade stuff first, if you can find it – just so you’ll be familiar with the texture! I found it in with the other pastas

I made something really similar to this the other day and it was delish. Who knew polenta slices and Mexican food could be such good friends?

I am scared of Polenta – it looks funny! I’m sure I would like it, if I can get past the looks. The enchiladas look delish! Love your blog, new reader here!!
