Happy Saturday! I’ve decided to call this weekend a Staycation – a vacation at home
Today through Monday, I’ll be blissfully blogging, reading, watching the Olympics, and maybe getting in a run or two. It’s time for a mini-break from school for this girl!
To top it off, I decided a relaxing weekend deserves a fun, and new dinner.

Breakfast for dinner is always one of my go-to’s, but I wanted something fun, and with a little staying power.
It looks like a plain waffle, but it’s so much more than that.
Ladies and Gentlemen, the Sweet Potato Waffle!

Sweet Potato Waffle
Adapted from Alton Brown
Makes 2, 4-square waffles
Ingredients
- 1 C peeled and cubed sweet potato, steamed
- 1 C whole wheat flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3 eggs, yolk and white separated
- 1/2 C milk
- 2 T sugar
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
Directions
- Mash cooked sweet potato, set aside.
- In a large bowl, combine flour, baking powder, and salt.
- In another bowl combine the sweet potatoes, milk, sugar, egg yolks, vanilla and cinnamon. Add the sweet potato mixture to the flour mixture and combine.
- With an electric mixer, beat egg whites until stiff peaks form. Gradually fold egg whites into sweet potato batter.
- Place 1/2 of batter onto a preheated waffle iron, and cook until lightly browned, about 5 to 6 minutes.

This was an extremely satisfying waffle – very filling, but not heavy. And while it wouldn’t have been a bad thing to taste sweet potato-ish, Grant and I were both pleasantly surprised that it didn’t taste any different from a regular, plain waffle. It was a great way to get in an extra vegetable serving!

Yummy looking waffles! Have a great staycation! Be sure to take a bubble bath and treat yourself to a homemade face mask with yogurt, banana, and honey.

stay-home vacation is probably the most relaxing one. I read books that I’ve been wanting for long time, catch up on movies, talk to friends, cook and sleep!


I made a big batch of waffles yesterday too, almost forgot how good it is!

Well I hope you enjoy the last day of your stay cation! We are supposed to get TON of snow here today, so if you are getting the same it may be a longer stay cation than you thought
The waffles look awesome! I love the idea of adding sweet potatoes. And yes, a serving of vegetables is something that makes me very happy, as does breakfast for dinner. Have a great day!

I’m on my last day of staycation right now, and I wish I structured my days a bit better; I had a few days where I was really productive, and a few days (like yesterday) where I laid on the couch and did a whole lot of nothing.
