How could one little avocado have so much potential?

It’s not enough to be the star ingredient in a taco salad, but then it goes on to create a fantastic, five-minute, vegan, healthy – and dare I say it? delicious chocolate ice cream.

Don’t be scared – you can’t taste the avocado! Instead, the avocado brings a very smooth and creamy texture, and when blended with cocoa and ice, the ‘ice cream’ has a consistency and flavour very similar to soft serve.

The recipe as follows isn’t overly sweet, so feel free to add more sweetener as your tastebuds desire!

Choco-cado Ice Cream

inspired by The Fitnessista’s Choco-cado Pudding

  • 3/4 avocado
  • 1.5 tbsp cocoa powder
  • 2 tbsp agave nectar or honey
  • 2 tbsp natural peanut butter
  • 2 tbsp almond milk
  • 2 cups ice*

Combine all ingredients in a high-speed blender*. Blend until smooth – serve immediately.

*If you don’t have a high-speed blender, try using crushed ice to start with!

Wow, that looks delicious, I’m always on the look out for a healthier version of ice cream. I think they some how taste better when you know what your eating is healthier for you!
